A healthy Bday at school

So it is my daughter’s birthday this week. “Mom, I want to bring 32 donuts for my Bday, please” Mmmm how can you tell your b-day girl that donuts are not in my healthy food categories and that I am less than willing….” How about we go for yummy strawberries this year they are so good and healthy?” “Donuts and strawberries ok but I want donuts.” “What about strawberries and grapes?”

“I’m Ok with cupcakes too” she replies. I did cupcakes 2 years ago on her first B-Day here in the States which is not only a huge amount of work but they are just empty, fluffy, tasteless cakes with a bunch of sugar on top ( like donuts really, except that donuts have a taste from the fat they are cooked in) 

“How about we make crepes instead of cupcakes? But you’ll have to help me prepare them.”

She is happy and I am happy. We get to share some cooking time together too. 

Did you ever try crepes? Those thin French pancakes.

Here is my recipe. 

  • 4 cups of whole wheat flour
  • 4 eggs
  • 1/2 quart of Almond milk
  • pinch of salt
  • 2 tbs of brown sugar
  • 3 tbs of coconut butter or olive oil
  • 1/4 cup of beer (for flavor and lightness)
  • 1 tsp of vanilla

Mix all in a blender, cook in a non stick pan.

Add sugar, shredded chocolate and banana slices ( my favorite), jam, honey and almonds…
